Day 1 of 365 - Feta, Spinach & Tomato Breakfast Wrap

 This is the first day of my new year's challenge. I want to try to create / cook one new dish a day. This could include main dishes, side dishes, desserts, drinks/shakes, and other tasty treats. Follow along and, when you try my new creation in your own kitchen, please share your feedback.  


Feta, Spinach & Tomato Breakfast Wrap


Equipment: 

  • small bowl
  • cutting board
  • knives for dicing
  • small non-stick pan that is oven safe
  • sheet pan
  • parchment paper

Ingredients: 

  • 1 tbs olive oil
  • 1.5 tsp Herbes de Province spice blend
  • 1 roma tomato, insides removed and diced
  • 2 tbs green onion, chopped
  • 2 cups fresh baby spinach
  • 3 eggs
  • 1tbs water
  • pinch of salt
  • 3 slices cooked bacon, roughly chopped
  • 4 slices of provolone, sliced thin from deli
  • 3 tbs feta cheese
  • 5 flour tortillas (taco sized)
  • non-stick spray

Directions:

  1. Heat oven to 400 degrees. Prep your sheet pan with parchment paper.
  2. In a small bowl, beat together eggs, water and salt. Set aside to rest. 
  3. In a small, non-stick oven safe pan, heat the olive oil on medium high heat. Add diced tomato, Herbs de Province and green onion. Saute until all is soft and the aroma starts to fill your kitchen. 
  4. Once tomatoes, herbs and onions have softened, add the fresh baby spinach. Continuously stir until the spinach has wilted and mixed well with the tomato/onion mixture.
  5. Spread the spinach, tomato, onion mixture to cover the entire bottom of the pan. Then pour in the beaten eggs, do not stir! Cover with provolone and feta cheeses and the diced bacon.
  6. Cover your pan and allow the eggs to finish cooking. If you would like a slightly crispy top, finish the cooking process in the oven for a few minutes on broil. 
  7. Once eggs have set, slip the eggs out onto a cutting board to cool and set for about 5 minutes. 
  8. Once set, divide into 5 equal servings and roll into your tortillas and place onto your parchment paper covered sheet pan. Spray top of the rolled tortillas with some non-stick spray. 
  9. Finish cooking in heated oven for 4 minutes on each side (spray other side with non-stick spray when you turn the wraps over). 
I make these as a meal prep breakfast, it's a good "on the go" or "grab on your way out the door" kind of breakfast! Lots of protein and veggies.
